High Protein Chicken Fried Rice

Who doesn’t love a good Chicken Fried Rice meal, but you also want to make sure that it hits those macros!

So today I am going to show you how I make my 500 calories/ 50g Protein Chicken Fried Rice Dish!

You can manipulate theses ingredients to best fit your macros but here is what I am using for this 1 meal.

Ingredients

  1. 8 ounces of Chicken (weighed raw)

  2. 1 Cup of Rice (weighed dry)

  3. 1 Cup of Frozen Stir Fry Veggies

  4. 1 Whole Egg

  5. Low Calorie Teryiaki Sauce (1 serving)

  6. Sriracha (1-2 servings)

  7. Soy Sauce (1-2 servings)

  8. Salt (Use as much or as little as you would like)

Step To Cook this Wonderful Meal

Cook the Chicken: Heat up your pan on your stovetop to Medium/Low Heat and spray with a nonstick no calorie spray. While the pan is heating up Mix 1-2 servings of the Teriyaki sauce with your 8 ounces of chicken (Be sure to dice/chop up the chicken into small cubes) and Salt to your liking. Now once the pan is ready put the chicken into the pan and cook until it reaches the temperature of 165 degrees (I like to cut open the largest cubes and make sure its cooked all the way through). Let it sit in the pan on low heat so you can add ingredients later.

Cook the Rice: While the chicken is cooking mix your 1 cup of rice with the recommended amount of water on the box, Add Salt and microwave for around 5-7 minutes (I prefer microwave rice because its easier to make, but you can choose what rice you would like).

Cook the Veggies: You have 2 options

Option 1: Microwave the veggies before or after you cook the rice. Be sure to follow the instructions on the bag of the veggies

Option 2: Throw your veggies into the pan with the cooked chicken on a low heat and cover with a lid

Mix everything together: Now take the rice and the veggies and throw it into the pan with the cooked chicken on low heat and crack 1 whole egg into the center then start mixing it all together until the egg is fully cooked. Now top with as much or as little of soy sauce you would like and plate

Top with Sriracha and any extra teriyaki sauce you would like and enjoy!
